DOMAINE AUBERT
Established since 1823, the Aubert family awaits you in the heart of the Loire Valley, the land of the kings of France. Jean-Claude Aubert and his son Didier cultivate tradition in an area of 20 hectares of vines. There methods are painstakingly traditional. The vineyards are on the top of a limestone escarpment and under the vineyards a labyrinth of caves has been carved out of the limestone and this is where the wine production takes place for generations. When you visit the caves you could be forgiving for thinking you are in a museum with rows of oak barrel stacks of bottles in various stages of fermentation and racks of sparking "method traditional" which is still spun a quarter turn each day. In fact what you are seeing is the present production method.
Grapes:Chenin Blanc
Taste:Rich for a demi-sec, with layers of mango and papaya driven by notes of ginger, cardamom and bergamot. Hangs together, thanks to deft acidity that keeps the sweet and dry aspects balanced.
